Rob loves pickled beets, me not so much. I have a friend who quickly made up some pickled beets for their Aussie burgers (that will be a future post) so I googled it. Sure enough refrigerator pickled beets are a real thing. So I picked a recipe and voila here they are.

Recipe is so quick and easy. Here it is:
- 5 medium beets
- 1 small onion (optional)
- 5 clove buds
- 1 cup vinegar
- 1/2 cup water
- 3/4 cup sugar
- Pinch of salt
Cook, peel and slice beets, set aside. If adding the onion, slice and set aside. In pot bring to boil rest of ingredients and simmer 5 minutes. Add beets (and onion) to brine and bring back to boil, simmer 2 minutes.
Remove clove buds and place in sealable dish and put in fridge. Let sit a week, open and enjoy. Good for a month if they aren't consumed before that!
I must admit these have made me a fan of pickled beets!
